WHere is a home-style take on a cocktail found on the seasonal cocktail list. Designed as a batch prepared mix which is packed with essence of a Christmas time, which makes it perfect for a festive gathering. Any leftover syrup you can use for morning drinks, sweets, or to mix additional servings of the drink.
Bikini Recipe
Makes enough for 10 people
Ingredients for the Clementine Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Cocktail (yields 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
For the Cordial: Put every components inside a pan, heat until it reaches a light boil, agitating to dissolve. Then, remove from the stove and let it to reach room temperature fully. Pour into a sealable bottle, seal and refrigerate it chilled, it can be stored for up to a month.
For the Cocktail Base: Mix all the liquids into a big jug, let it rest for 60 minutes, then pass it through , ideally through cheesecloth, making it fully clarified.
For serving: Measure 85ml of the premix into your stirring glass packed with ice, gently stirring carefully for one minute until cold. Pour to a frosted cocktail glass or similar, top with some cranberries and finish by giving it a light spray of mandarin oil above the glass.
